Happy three-day weekend, all!

I hope some of you managed your vacation time better than I did and have more than three days off to head to the beach, the mountains, or just your own backyard for some much needed R&R. Whatever your plans are for the holiday break, though, I’m sure there’s going to be a BBQ in your future.

Husband and I made these grilled peaches a few weeks ago, and they were so good that I just cannot keep the recipe to myself. I loved how the peaches caramelized with the heat of the grill, and the slightly smoky char lines are a great contrast with the sweet fruit. My favorite part is the cinnamon sprinkled over each half, along with that hint of heat from the ground ginger. Top it all off with a dollop of chilled whipped cream, and I’m in heaven.

This is the perfect light and sweet dessert after a heavy day of BBQ eating. And, the recipe is easily doubled (or tripled! or quadrupled!) to serve a crowd. Feel free to prep these babies ahead of time and put them in the fridge until you’re ready to grill them.

It’s important to note that the measurements for the spices below are just suggestions. The best thing about this recipe is that it can be altered for taste. Like a ton of cinnamon? Load ’em up! Really want just the peach flavor to shine through? Use only a sprinkling of spice. You really can’t go wrong.

When you select your peaches, you don’t want them to be completely hard, but you don’t want them to be soft, either. Somewhere in the middle is best to help them stay in one piece on the grill. Peaches ripen rather quickly, so be sure to keep this in mind if you’re purchasing them in advance of the day you plan to grill them.

You could serve the grilled peach halves with scoops of vanilla ice cream, but we used Cool Whip to keep things a bit healthy(ish). The warm peaches quickly melt the whipped (or ice) cream, so make sure you serve these immediately after garnishing.

Grilled Peaches with Cinnamon and Cream

Ingredients
  

  • 3 semi-firm peaches, halved
  • 1-2 tbsp coconut oil (for brushing)
  • 2 tbsp ground cinnamon
  • 1/4 tsp ground ginger
  • prepared whipped cream, to taste

Instructions
 

  • Preheat your indoor or outdoor grill.
  • Cut each peach in half. Remove and discard pits.
  • Lightly brush each peach half with coconut oil and sprinkle evenly with the ground cinnamon and ground ginger.
  • Place peach halves flesh-side down on heated grill grate. Let cook 2-3 minutes until char marks appear, then flip and grill the other side for 2-3 minutes. If peaches are still very hard, flip and grill again on each side for an extra 1-2 minutes. Peaches should be softened enough to cut into with a spoon when finished.
  • Remove peach halves from the grill and place flesh-side up on a plate. Add dollops of whipped cream to the center of each half, and then sprinkle a additional ground cinnamon over the whipped cream. Serve immediately.
