Piña Colada Mocktails are made with pineapple, coconut milk, and coconut cream to give you an authentic cocktail flavor without the booze.

Ingredients

  • 1 cup frozen pineapple chunks
  • 1 cup unsweetened coconut cream well-stirred
  • ¼ cup unsweetened coconut milk well-stirred
  • ¼ tsp vanilla extract
  • ½ tsp freshly squeezed lime juice
  • Freshly grated or ground nutmeg optional, for garnish
  • Maraschino cherries optional, for garnish
  • Additional pineapple chunks optional, for garnish

Instructions

PREP INSTRUCTIONS

  • Open the can of coconut milk. Carefully give it a good stir (might splash!) so the liquid and solids blend together. Set aside.
  • Open the can of coconut cream. Carefully give it a good stir (might splash!) so the liquid and solids blend together. Set aside.

DRINK INSTRUCTIONS

  • Add the frozen pineapple, coconut cream, coconut milk, vanilla extract, and lime juice to the bowl of a blender. Blend until all ingredients are incorporated.
  • Pour piña colada into a tall glass. If desired, garnish with grated nutmeg, cherries, and additional pineapple chunks. Serve immediately while cold.
