Ingredients
1ripe avocado, halved and pitted with the flesh scooped out
2cupsfresh cilantro
1 1/2cupsfresh parsley
1/4cup fresh basil
1 tbsphoney
1/4cupextra-virgin olive oil
1/4cupred wine vinegar
1tsponion powder
1/2tspsalt
1/2tspground black pepper
Instructions
Combine all ingredients in a large food processor. Pulse or blend until the mixture is smooth and well-combined.
Pour avocado chimichurri sauce into a bowl and set aside. If using later in the day, cover with plastic wrap (make sure the plastic is touching the chimichurri to avoid browning/oxidation) and store in the fridge.
