Ingredients
1cupunsalted butter, at room temperature
1/4cupgranulated sugar
3/4cuplight brown sugar, firmly packed
1tbspmilk
2 eggs
1/2tspground cloves
1 1/2cupsall-purpose flour
1/2tspbaking soda
1/4tspsalt
1/4cupunsweetened shredded coconut
1cupmini semisweet chocolate chips
Instructions
PREP INSTRUCTIONS
Preheat oven to 350F.
Line baking sheets with parchment paper and set aside.
BAKING INSTRUCTIONS
Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the milk and mix just enough to incorporate the liquid into the mixture.
Add the eggs, one at a time, mixing well after each addition.
In a small bowl, whisk together the flour, ground cloves, baking soda, and salt. Add the dry ingredients into the wet, beating in between each addition and scraping down the sides of the bowl as needed, until all ingredients are thoroughly combined.Note: the cookie dough will be very loose, almost like cake batter.
Add the chocolate chips and coconut flakes to the mixer, then beat until just combined.
Use a cookie scoop to scoop cookies onto the prepared baking sheets; only place 5-6 cookies per sheet since they will spread in the oven.
Bake at 350F for 10-11 minutes, until light golden brown. They will still be very soft.
Remove trays from the oven to a cooling rack. Let the cookies rest 10 minutes, then transfer them from the pan to the cooling rack. Cool completely.
