CHICKEN CAESAR PASTA SALAD INGREDIENTS
1store-bought rotisserie chicken, shredded
12ozshort pasta
10-12cupschopped romaine lettuce
1pintgrape or cherry tomatoes, quartered
freshly grated Pecorino Romano cheese, to taste
Homemade Caesar Salad Dressing, to taste (recipe below)
HOMEMADE CAESAR SALAD DRESSING
1/2cupGreek yogurt
2tspfresh lemon juice
1/2tsponion powder
1/8tspground black pepper
1 1/2tspWorcestershire sauce
1 1/2tspDijon mustard
3/4cupfreshly grated Pecorino Romano cheese
1-2tbsplukewarm water
Instructions
PREP INSTRUCTIONS
Boil and drain pasta according to package instructions. Set aside.
Shred rotisserie chicken and set aside.
Chop lettuce and set aside.
Quarter tomatoes and set aside.
Grate ¾ cup cheese and set aside.
HOMEMADE CAESAR SALAD DRESSING INSTRUCTIONS
In a large bowl or pitcher, whisk together the yogurt, lemon juice, onion powder, black pepper, Worcestershire sauce, Dijon mustard, and grated cheese until completely combined.
Whisk in the water 1 tbsp at a time, until Caesar dressing is thick but pourable, or to your desired consistency.
CHICKEN CAESAR PASTA SALAD ASSEMBLY INSTRUCTIONS
Combine cooked pasta, shredded chicken, chopped lettuce, and quartered tomatoes in a large bowl.
Drizzle ingredients with a few spoonfuls of homemade Caesar salad dressing and grate additional Pecorino Romano cheese, to taste, into bowl.
Toss all ingredients together with tongs until everything’s covered with salad dressing. Taste, then add more dressing if necessary. Serve immediately.
